Chicken with Potato Noodles and Spiced Onion Jam

This is my budget friendly recipe is from Top Chef, season 7, episode 1, Chef Angelo Sosa.  It’s a really fun way to make basic ingredients a bit more fancy and tasty.  So if your strapped for cash and want to impress someone with your cooking this will be perfect!  The Spiced onion jam really adds a bit of flare to the chicken and potatoes and it compliments each other so well.

2 appetizer portions – (Just double quantities if making for a main course)

  • 2 chicken thighs (de boned)
  • 1 tsp cumin powder
  • 1 Tsp salt

Potato Noodles:

  • 1 large potato, julienned (8 oz)
  • 2 Tbl butter / 50g
  • 4 oz vegetable stock
  • Salt and pepper, to taste

Curry Onion Jam:

  • 1 medium brown onion
  • 2 tbps sugar
  • 1 tsp curry spice mix
  • 4 tbsp  Japanese rice vinegar (or cider / white wine vinegar)
  • 1 tbsp oil

Directions

For the Chicken:

Season chicken and marinade for 15 to 20 minutes. Sauté with grapeseed oil

For the Potato Noodles:

In a pan over gentle heat, combine julienned potatoes, butter, vegetable stock, salt, and pepper. Glaze “noodles” until cooked and season to taste.  They will only take about 5 minutes to cook through as they are so thin.  Be careful not to over cook them as you will end up with mashed potato!

For the Curry Onion Jam:

In a pan over low heat, sweat onions, sugar, and curry spice in oil until soft. Deglaze with vinegar and season with salt. Chill.  Keep simmering the jam until it becomes thick and caramelised and the consistency of jam.

To Plate:

Place potato noodles onto plate. Arrange chicken thigh. Top with onion jam. Drizzle with oil and a little garnish of coriander tastes wonderful with this dish!  Enjoy.
